Great, healthy roast chicken dinner with vegetables and potatoes.
1 lemon
2 sprigs of thyme, chopped
2 sprigs rosemary,chopped
8 cloves of garlic, minced
2kg whole chicken
300g new potatoes
½ butternut squash
2 red onions, sliced
250ml white wine
Preheat oven to 190°C/350°F/Gas 5.
Mix lemon zest, rosemary, 2 of the garlic cloves, salt, pepper and teaspoon of olive oil in a bowl.
Brush this on the chicken.
Cut lemon in half and place inside the chicken cavity.
Roast for 1 hour 10 minutes or until the chicken juices run clear.
Place the new potatoes, butternut squash, red onions and garlic cloves on a tray and roast for 1 hour.
our the the meat juices from the roasting tray into a small saucepan. Add the wine, stirring quickly. Use as gravy to serve.
