Hi-fibre fruit muffins

Hi-fibre fruit muffins
This muffin is high in fiber and only has 143 calories. It's prefect for a low-cal breakfast or for a snack during the day.  

100ml skimmed milk
60g wheat bran
60g soft brown sugar
1 large egg
100g plain flour
pinch each of ground cinnamon and/or grated nutmeg
½ tsp baking powder
½ tsp bicarbonate of soda
125g fresh blueberries, cranberries or raspberries

Preheat the oven to 190°C/375°F/Gas 5.

Put the skimmed milk and wheat bran in a bowl, stir well and set aside for 10 minutes.

Beat the sugar and egg until well combined and then beat in the bran mixture.

Sift in the flour, spices, baking powder and bicarbonate of soda. Fold in gently, but thoroughly, with a metal spoon in a figure-of-eight motion. Stir in the berries to distribute them evenly throughout the mixture.

Divide between 6 paper cases in a muffin tin.

Bake in the preheated oven for 20 minutes, or until the muffins are well risen and firm to the touch.

Cool on a wire rack, then store in an airtight tin or a sealed container in the refrigerator.
