Cinnamon french toast with berries
This tasty breakfast recipe is low in calories (only 227) and is specially designed to keep your energy levels up during the day. It will also keep you fuller for longer, cutting out the need to snack before lunch.

2 small eggs
1 tbsp skimmed milk
Good pinch of cinnamon
Pinch of brown sugar
2 medium slices multi-grain bread
Spray oil
4 tbsp virtually fat-free fromage frais
75 g ripe strawberries or raspberries

Whisk the eggs in a shallow bowl with the skimmed milk, cinnamon and brown sugar. Place the bread slices in the egg mixture and set aside for a few minutes to soak up the egg.

Lightly spray a non-stick frying pan with oil and place over a low heat.

When the pan is hot, add the soaked bread slices and cook gently for 2–3 minutes each side, until golden.

Remove from the pan and place on 2 warm plates.

Top with the fromage frais and fresh berries and serve.
