Homemade burger

10g butter

75g onions, finely chopped

450g minced beef or minced lamb

1/2 tsp thyme, chopped

1/2 tsp parsley, chopped

1 egg, beaten

Pinch fine sea salt and freshly ground black pepper

4 tbsp olive oil, for frying

4 ciabatta rolls

Lettuce leaves

Mayonnaise

Pickled cucumbers or gherkins

Relish, to serve

Heat a small saucepan over low heat. Pour the butter and let it melt. Add the chopped onions and fry them until soft and light golden. Let them cool down.

Combine the meat, the herbs and the egg. Sprinkle with salt and pepper. Mix in the onions.

Drop a small amount of the mixture into a heated frying pan. This way you can adjust the seasoning of the meat before making the burgers.

Wet your hands and shape the mixture into 4 equal patties. Pour the oil on the frying pan and turn on the heat. When hot, place the burgers into the pan and fry them for about 3 or 4 minutes on each side.

Preheat the grill.

Cut the ciabatta rolls in half, horizontally.

Place under the grill to toast. Lay a handful of lettuce leaves over one half of the ciabatta rolls and top with mayonnaise and pickled cucumbers.

Place the burger on top and cover with the other half of the ciabatta. Serve while hot.

Always leave a small amount of fat in the minced meat, otherwise your patties will turn out too dry once cooked.
- You can replace the parsley and thyme with chopped chilli and coriander or cayenne pepper, ground cumin and coriander if you are using lamb meat. You can also replace them by 1 tablespoon of chilli sauce and 1 freshly chopped chilli for a much hotter taste. Yogurt and sweet chilli sauce will go perfectly with these spicy burgers.
