Homemade coleslaw and ham sandwich
 
These sandwiches are filled with a special ingredient, Vitamin K. This absolutely essential vitamin helps in building strong bones and prevents heart disease.

½ large cabbage, sliced as thinly as possible
1 tsp sea salt
1 white onion, finely sliced
1 large carrot, shredded
A few sprigs of flat-leafed parsley, roughly chopped
1 tsp apple cider vinegar
1 tsp brown sugar
1 tsp Dijon mustard
Ground black pepper to taste
150g low fat, Greek style yoghurt
2 tbsp low-fat mayonnaise (optional)

2 slices of wholemeal thick crust bread

Butter, for spreading
2 slices good quality ham

In your food processor, pulse the cabbage until thinly sliced along with some salt.

Remove and drain any excess liquid then set aside in a large bowl.

Add in the onion, carrot and parsley the food processor and whizz up then transfer to the bowl along with the cabbage.

In a mixing bowl, stir together the sugar, apple cider vinegar, Dijon mustard, black pepper, Greek yogurt, and mayonnaise (if adding it).

Pour over the vegetables and mix well to combine.

Spread each bread slice with a thin layer of butter, then ham followed by the coleslaw.
