Iced lemon biscuits

175g plain flour

1 lemon, grated zest only

110g soft butter

50g sugar

For the icing:

75g butter, softened

175g icing sugar, dusted

1/2 large lemon, grated zest

1-2 tsp freshly squeezed lemon juice

1-2 drops yellow food colouring

Sprinkles to decorate

Heat the oven to 180°C

Mix the flour and lemon zest in a bowl. Add the butter and rub between your fingers until the mixture looks like fine breadcrumbs.

Add the sugar and knead to a stiff dough. Do not try to add some water.

Roll out to 1/2cm thickness then use a cookie cutter to cut into desired shapes.

Gently move the cookie shapes to a baking tray. Bake for 6 to 10 minutes, until the cookies take a light gold colour.

Take the cookies out of the oven and leave them to cool on a wire rack. Meanwhile, make the icing by beating together the ingredients until soft and fluffy for about 5 minutes or so. When the cookies are completely cool, spoon on the icing and dust with sprinkles.
