Italian beef casserole

A complete meal in one pot.
1 kg blade steak, cut into 3cm cubes
1 tbsp olive oil
240ml beef gravy
2 onions, diced
2 carrots, diced
2 stalks celery, diced
2 garlic cloves, finely chopped
2 potatoes, diced
400g chopped tomatoes
260g tomato passata
1 tbsp thyme
1 tbsp rosemary
Preheat the oven to 140°C/ gas mark 1
Heat the oil in an sauce pan over a low heat. Add the onion, carrot and celery and cook for 10 minutes. Set aside.
Increase the heat and add the beef. Cook until bown.
Return the onion, carrot and celery to the pan and add the garlic, potatoes, tomatoes, tomato passata, thyme and rosemary.
Pour in the beef gravy and place in the oven for 3 hours.
Make sure the beef is constantly covered by the gravy and add more if necessary.
This will keep in the fridge for up to two days.
