Italian style baked potato
This budget friendly supper is fun for the family and makes for a lovely alternative meal.

4 baking potatoes, scrubbed and dried

1 tbsp olive oil

½ red onion, finely chopped

1 garlic clove, crushed

60g sliced pepperoni

400g tin chopped tomatoes

50g basil leaves, shredded

100g grated mozzarella

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line a baking tray with greaseproof paper and set aside.

Prick the potatoes several times with a fork.

Bake for 1-1½ hours, each wrapped in kitchen foil until they feel soft.

While the potatoes cook, heat the oil in a small pan and cook the onion for 5 minutes then stir the garlic and pepperoni in and cook for 2 minutes further.

Add the chopped tomatoes and bring to the boil, then simmer for 5 minutes.

Season with salt and pepper then stir in half the basil.  

Remove the potatoes from the oven and place them on the baking tray, split them in half and spoon over the sauce and a generous handful of cheese along with the rest of the basil.

Place back into the oven until the cheese has melted (about 5 minutes).

Serve warm with a green salad or favourite green vegetables.
