Jam & coconut sponge slice

Delicious sticky sponge slices that everyone will love.
225g caster sugar
225g butter
4 eggs
1 tsp vanilla extract
225g self raising flour
½ tsp baking powder
1 tbsp of milk
4 tbsp strawberry jam
75g dessicated coconut
Grease and line a 20 x 20 x 5cm tin.
Preheat the oven to 170°C/325°F/Gas mark 3
Cream butter and sugar.
Add eggs one at a time, beating between each addition.
Add vanilla extract and stir together.
Sift self raising flour and baking powder, fold in gently.
Add 1 tbsp milk and combine.
Add batter to lined cake tin and bake for around 30 mins or until golden brown on top.
Remove from the oven and leave to cool on a wire rack.
Once completely cool, spread jam all over the top of the sponge.
Sprinkle dessicated coconut over this.
Cut into small squares and serve.
