Jamaican beef stew

Jamaican beef stew

750g braising or stewing beef

1l beef stock

2 large onions, sliced

2 garlic cloves, sliced

Large piece of ginger, peeled and cut into matchsticks

2 bay leaves

5 allspice berries

1 stick cinnamon

4 cloves

1 red chilli, seeded and finely chopped

400ml coconut milk

3 sprigs thyme

2 sweet potatoes, peeled and cut into large chunks

4 large new potatoes, peeled and cut into large chunks

100g kale, chopped

Put the ingredients up until the cinnamon in a large pot add add seasoning.

Leave to simmer for 30 minutes with no lid on the pot.

Tip in the chilli, coconut milk and thyme and cook for a further hour.

Add the potatoes and cook for another 30-40 minutes.

Finally add the kale and cook for 10 minutes.
