Lamb burgers with roasted vegetables

Lamb burgers with roasted vegetables
Who doesn't like a tasty homemade burger?

400g minced lamb

A handful of basil leaves, roughly torn

1 clove of garlic, peeled and chopped

Salt and freshly ground black pepper

2 rounded teaspoon capers or black olives (pitted and chopped)

4 ciabatta or burger buns

4 slices of grilled aubergine

4 large slices of grilled courgette

125g buffalo mozzarella

1 tbsp olive oil

4 small handfuls of rocket

Place the lamb in a bowl, add the basil, garlic, salt, pepper and capers (or olives) and mix well.

Divide the mixture into 4 and shape into flat burgers.

Slice the ciabatta into two and heat under a grill on medium, along with the sliced grilled vegetables. Cut the mozzarella into slices  

Heat the oil in a large frying pan, quickly brown the burgers on one side. Turn them over and place a slice of mozzarella on top of each burger. Leave to cook for 2 more minutes.

Place some rocket on the bottom portion of each bun, add the vegetable slices then the burgers. Add the top of the bun and serve immediately.
