Lamb chow mein

1 packet medium dried egg noodles

500g lean lamb strips

2 tbsp sesame oil

1 onion, sliced

1 cm grated ginger

1/2 red chilli (or as hot as you would like)

3 tbsp light soy sauce

3 tbsp oyster sauce

1 tsp sugar

240g sliced cabbage

400g sliced mixed vegetables - broccoli, carrots, peppers.

1 spring onion, to garnish

Cook noodles according to directions on packet and set aside.

Heat the sesame oil in large pan or wok, add lamb and pan fry until browned and cooked through.

Add the onion, chilli and ginger, soften for about 2-3mins. 

Stir in the vegetables and soften for about 5 mins.

Pour in the soy sauce, oyster sauce and sugar, simmer for 10-20 until the meat is cooked through.    

Serve with noodles and garnish with the sliced spring onion.
