Lamb kebabs

450g shoulder or leg of lamb, off the bone, fat removed

150ml natural yogurt

1 tsp ground coriander

1 pinches ground cumin

pinch of black pepper

½ lemon, juice only

For the cucumber and tomato raita

250ml Greek yogurt

½ cucumber, deseeded and finely diced

4 tomatoes or 16 cherry tomatoes, chopped

2 tbsp chopped coriander or mint

1 tsp ground cumin seeds

Salt, black pepper

Cut the lamb into 3cm cubes. In a medium bowl, combine the natural yogurt, coriander, cumin, black pepper and lemon juice. Tip in the lamb and stir well. Marinate for at least 1 hour.

Making the cucumber-tomato raita: Pour the Greek yogurt in a bowl. Add the cucumber, tomatoes, herbs, cumin, salt and pepper. Set aside in the refrigerator.

Remove the lamb from the marinade and sprinkle with salt and pepper.

Skewer the lamb cubes then place them on a barbecue or a griddle pan. Grill for about 8 to 10 minutes, turning and brushing with marinade once in a while.

Serve hot with the cucumber and tomato raita.
