Leftover turkey coconut curry
This is an ideal dinner for busy mums over the Christmas holidays as it uses both leftover turkey and frozen veggies, saving you a lot of time and energy.

1 tablespoon olive oil

3 cloves of garlic, minced

500g leftover turkey

1 tbsp curry powder

1 tin of tomatoes

1 tin of light coconut milk

200g frozen peas

200g frozen cauliflower

1 red onion, diced

Over a medium-high heat, warm the oil and garlic in a large saucepan for 1 minute. Add the turkey and cook for 5 minutes until heated.

Add the curry powder and mix thoroughly. Cook for 2 minutes.

Add the rest of the ingredients and simmer for 20-25 minutes.

Serve with Basmati rice.
