Lemongrass and lime chicken burger

Lemongrass and lime chicken burger

1 small onion

1 clove garlic

1 stalk lemongrass

400g minced chicken

60g fresh white breadcrumbs

2 tbsp chopped coriander

2 tsp finely grated lime zest

1 tbsp fish sauce

2 tsp caster sugar

Light-flavoured oil, such as rapeseed, for brushing

To serve:

Soft rolls


Fresh mint and coriander leaves

Chilli sauce


Peel the small onion and the garlic clove. Finely grate the onion then crush the garlic. Thinly slice the white part of the lemongrass. In a large bowl, mix together the chicken, onion, garlic, breadcrumbs, coriander, lime zest, fish sauce, sugar and lemongrass until well combined. Using your hands, shape the mixture into 4 patties. Cover and put in the refrigerator for about 30 minutes.

Preheat a grill pan or a barbecue. Brush a little bit of oil over the patties and cook for about 4 minutes on each side.

Put the lettuce, burger, chilli sauce, mint and coriander leaves and mayonnaise on the base of the soft rolls. Cover with the top and serve.
