Linguine with lemon, garlic and thyme mushrooms

Simple, savoury and absolutely delicious.
225g chestnut mushrooms, finely sliced
80ml olive oil
1 clove garlic, finely chopped
1 lemon, zested and juiced
4 sprigs fresh thyme leaves
450g linguine
1 bunch fresh parsley, leaves chopped
2 to 3 tbsp freshly grated vegetarian Parmesan, or to taste
Put the mushrooms into a large bowl with the oil, salt, garlic, lemon juice and zest, and thyme leaves.
Mix well to combine thoroughly.
Cook the pasta according to the instructions and drain retaining some water.
Quickly put the pasta into the bowl with the mushroom mixture and toss everything together to coat.
Add the parsley, cheese and a bit of pepper before tossing again then serve immediately.
