Low carb filo chicken pizza

100g of cooked Moy Park chicken breast (sliced)
Filo pastry sheets
50g of pizza topping tomato sauce
50g of white mushrooms (sliced)
50g of roasted yellow peppers
25g of red onions (sliced into thin wedges)
30g of grated mozzarella
A handful of fresh parsley roughly chopped or freshly chopped basil
Cut out the filo pastry into a 10 x 8 inch rectangle and place onto a baking sheet.
Pre-heat the oven to 190°C.
Spread the pizza topping sauce over the filo pastry.
Place the cooked chicken breast, mushrooms, roasted yellow peppers and red onion wedges on top of the sauce, arranging neatly.
Then add the grated mozzarella on top.
Place in the oven and cook for 20-25 minutes at 190°C until the pastry is golden brown and the mozzarella is toasted.
Sprinkle with fresh parsley and serve while hot.
