Luxury bread sauce

25g Avonmore butter

1 shallot finely chopped

200ml Avonmore milk

180ml Avonmore Fresh Cream

80g fresh white breadcrumbs

¼ tsp each ground cinnamon, cloves, nutmeg

½ tsp each chopped fresh thyme & sage

Salt & freshly ground black pepper

Melt the butter in a saucepan over a medium heat. Add the chopped shallot & spices and gently fry for 1- 2 minutes.

Pour in the milk and cream. Bring to the boil & then reduce the heat to the lowest setting. Add the breadcrumbs and leave to cook for 10 minutes, stirring occasionally.

Finally add in the chopped herbs and season to taste with salt & fresh ground pepper. Serve as an accompaniment to poultry dishes, roast pheasant or duck.
