Mango and Coconut Granola

Mango and Coconut Granola
This recipe uses maple syrup and honey as a sweetener, rather than refined sugar

125ml maple syrup

3tbsp honey

300g oats

50g sunflower seeds

50g pecan nuts

50g cashew nuts

50g dried mango

50g desiccated coconut

Preheat your oven to 180oC/160o fan

Mix the maple syrup and honey in a bowl until well combined

Roughly chop the cashew nuts and pecan nuts

Next, stir in your oats, chopped nuts, and seeds, and mix until all ingredients are nicely coated with the syrup and honey mixture

Line two baking trays with greaseproof paper

Pour granola mixture onto the trays and spread out so that it is even

Bake in the over for 20 minutes, stirring every few minutes to ensure the mixture bakes evenly

After 20 minutes, remove and stir in the desiccated coconut

Bake for a further 10-15 minutes, until all the granola is a nice golden colour

Once cooled, add in your dried mango and mix well

Store in an air tight container to keep your granola nice and fresh

Our granola tastes great with natural, yoghurt, berries and a drizzle of honey
