Mango and lime chia pudding
Zesty, healthy breakfast you can make the night before!

120ml coconut milk

3 tbsp chia seeds

2 tbsp honey

1 vanilla pod, halved and scraped

1 fresh mango, peeled and chopped

1 lime, juiced

Mix together the coconut milk, chia seeds, honey and scraped vanilla pod in a bowl.

Whizz the mango, lime and a little water in a blender until a puree is formed.

Layer the chia seed mix and mango puree into 3 glasses/jars.

Cover the bowl with cling film and place into the fridge for a minimum of 4 hrs or overnight.

Remove from the fridge and serve.
