Mango chutney
1 large mango, diced
1 shallot, finely chopped
3 tbsp red wine vinegar
3 tbsp brown sugar
1/2 tsp black mustard seeds
Seeds from 1 star anise
Add all the ingredients into a small non-stick saucepan.
Simmer over gentle heat for 10-15 minutes until the ingredients have slightly reduced.
Pour into a small jar or serving dish and set aside to cool.
Serve with naan bread and your favourite curry.
