Mango frozen yoghurt
Frozen yoghurt is a healthy alternative to ice-cream. This recipe uses mangos but you can use whatever fruit you might have in your cupboard. 

1 large mango, chopped

250g natural yoghurt

50g caster sugar

1 tsp icing sugar

1 tsp vanilla extract

Cut the mango into cubes and place in a food processor.

Process for about 30 seconds before adding in the yoghurt, caster sugar, icing sugar and vanilla extract. 

Process until the mixture is well combined and the mango is a smooth puree.

Spoon the entire mixture into a freezer-proof tub and place in the freezer overnight  until it is solid.

Remove and serve in small bowls.

You can keep this in the freezer for three weeks as long as it is not thawed.
