Mexican corn on the cob

Corn on the cob is not just for BBQs. Glaze with butter and paprika for a delicious snack.
4 tbsp butter, plus extra for serving
4 corn on the cobs
1 tsp chilli powder
1 tsp lime juice
Handful thyme to garnish
Preheat oven to 180°C/ 350°F/ gas mark 4.
Rub each corn with 1 tbsp butter. Sprinkle on the chilli powder, keeping some for serving and drip the lime juice over it.
Place in the centre of the oven on a wire rack for 40 minutes.
Remove and serve with a dollop of butter in the middle.
Sprinkle with the extra paprika and garnish with thyme.
