Mexican style avocado and eggs

Mexican style avocado and eggs
Fried egg and avocado makes a delicious healthy snack.

1 tsp olive oil
2 eggs

2 plain wraps

2 avocado, de-pipped and peeled

1 tsp lemon juice

Salt and pepper to garnish

Preheat the oven to 180°C/ 350°F/ gas mark 4.

Gently heat the wrap in the oven for about 3 minutes.

Heat the oil in a pan and fry the eggs.

While the wrap is warming up and the eggs are frying, mash the avocado in a small bowl.  

Add the lemon and mix together.  Season with salt and pepper.

Remove the wrap from the oven spread the avocado over it and top with the fried egg.
