Mild spiced chicken with potato wedges
A hint of chili chicken served with potato wedges will be a hit at the family table.
 

800g potatoes, washed and cut into wedges (leave the skins on)

3 tbsp olive oil

½ tsp of chilli powder

500g chicken breasts, cubed

1 onion, finely chopped

1 cm fresh ginger, chopped

2 tbsp vegetable oil

½ bunch of flat leaf parsley, chopped

Preheat the oven to 180°C / 350°F / Gas mark 4.

Blanch them in salted boiling water until they begin to soften but are still firm.

Drain and place them in a roasting pan, drizzle with the olive oil, sprinkle with the chilli powder, some salt and pepper, give the roasting tin a shake to coat everything and cook in the oven for 30 minutes.

Heat the vegetable oil in a wok or large pan.

Add the onion, ginger and the chicken and stir fry for 10 minutes or until no longer pink.

Place the potato wedges in a deep serving dish, and add the stir fry and garnish with finely chopped flat leaf parsley.
