Mincemeat stuffed apples

Using up mincemeat couldn’t be easier and makes a lovely dessert.
2 medium apples
8 tbsp mincemeat
1 small lemon, finely grated zest and juice
Fresh cream, whipped (optional for serving)
Cut the apples in half widthways. Remove and discard cores, then stand the apples in a microwave-safe dish.
In a bowl, mix mincemeat and lemon zest.
Spoon into the centre of the apples and pour over the lemon juice.
Cover the dish with cling film, pierce several times then microwave on high for 4½ minutes.
Turn the dish halfway through.
Remove the cling film and leave to stand for 5 minutes before serving with fresh cream if you like.
