Mini Bundt cakes

Mini Bundt cakes
With its distinctive ring shape, the Bundt cake, inspired by a European fruit cake, is pretty impressive. 
 

You will need a 6-holed Bundt tin.

160g butter, at room temperature plus extra for greasing

120g caster sugar

180g plain flour

½ tsp baking powder

3 eggs

2 tsp vanilla extract

1 tbsp water

120g icing sugar

Preheat the oven to 180°C / 350°F / Gas Mark 4. Grease your Bundt tin with a little butter.

Combine the butter and sugar together. Sift in the flour and baking powder and mix it all together.

Beat the eggs together in a jug and gradually add them to the mixture.  Add 1 tsp vanilla extract.

Pour the batter into the prepared tin and place in the centre of the oven for 15-20 minutes.

Remove from the oven and leave to cool.

In the meantime you can make the icing. Combine the water, icing sugar and the rest of the vanilla extract together.

Take the cakes out of the tin and pour the icing sugar over them.

Leave to set before serving.
