Mini cheese cakes
Cream cheese is such an easy ingredient to work with and these no-bake pies are so simple to make.

Half packet plain digestive biscuits

220g cream cheese

1 tbsp lemon juice

1 tsp vanilla extract

300ml condensed milk

Handful of cherries

Line a 12-hole cake tin with paper cake cases

Put the biscuits into a sealed bag and bash them with a rolling pin until just crumbs.

Pour 1 tbsp of the crumbs into each paper case. Press down with the back of the spoon to make the biscuit base. Leave to chill in the fridge until ready to use.

Combine the cream cheese, lemon juice, vanilla extract and condensed milk in a bowl.  Mix until well combined.

Remove the biscuit bases from the fridge and spoon in the cream cheese mix.

Smooth with the spoon

Top with a cherry and return to the fridge to set about 2 hours.

Remove the paper cases before serving.
