Mini pancakes with blueberries
Who said pancakes just had to be for breakfast? These are great at parties to keep hunger pangs away.

120g plain flour

20g caster sugar

1 tbsp baking powder

Pinch salt

2 eggs

200ml milk

1 tbsp olive oil

Handful of blueberries

Golden syrup for serving

Mint leaves to garnish

In a large bowl, combine the flour, sugar, baking powder and salt.

Beat eggs together with the milk.  Pour over the dry ingredients until combined.

Fold into a smooth batter.

Heat the oil in a frying pan over a high temperature. Pour tbsp of the batter onto it when it is really hot.

Don’t allow it to spread out. Instead use the pan to keep the batter in a small circle in the centre of the pan.

Cook until brown on both sides. Continue until all the batter is used up. You should get about 15 mini pancakes.

Stack about four pancakes on top of each other.

Top with a blueberry and hold together with a toothpick.

Garnish with the golden syrup and mint leaf before serving.
