Mint chocolate truffles

100ml double cream

200g good quality milk chocolate , broken into pieces

¼ tsp peppermint essence, we used Steenbergs Organic

Icing sugar, for rolling

Pour the cream into a pan and bring just to the boil. Turn off the heat and mix in the chocolate with a wooden spoon. Continue to stir until melted and then add the peppermint essence. Leave to cool and then chill until the mixture is solid. This will take 2-3 hours in the fridge.

Scoop out the mixture using a teaspoon and then roll into small balls with your hand. Roll in the icing sugar, they will keep chilled in the fridge for 3 days or in the freezer for up to 1 month.
