Mixed Peel

Mixed Peel
It’s hard to find really good quality mixed peel  so this simple recipe, never disappoints. 
 

Golden syrup

4 lemons

4 oranges

Cut the fruit in half and juice them – use the juice elsewhere. 

Using a dessertspoon, remove the inner membrane of the fruit. Finely dice the remaining peel and place it in a large jam jar (I usually use a large 1 litre Kilner jar which you can buy in shops like Ikea).

Pour golden syrup over the peel until the peel is completely covered and leave for two weeks. 

Prior to use, drain the peel from the syrup and use. 

Retain the syrup to reuse making more mixed peel or use on icecream.
