Mixed truffles
Mint, chilli truffles are a perfect gift or post dinner sweet treat.
 

150ml double cream

100g milk chocolate, chopped

100g dark chocolate, chopped

2 tbsp butter

3 tbsp golden syrup

1 tsp mint extract

2 red bird's-eye chillies, roughly chopped

Cacao for dusting, optional

Pour the cream into a pan and heat through until steam appears but do not boil.

Put the chopped chocolate and butter in a bowl, pour over the hot cream, and mix until smooth.

Add the golden syrup, mint extract and chilli.

Chill for 2 hours or until firm.

Using a melon baller or teaspoon if you do not have one and roll into 1 teaspoon balls. 

Dust with cocoa if you like

Cover with foil and chill until serving.
