Mojito cake
Deliciously moist cake with the zesty combination of lime and mint, as found in the popular Cuban cocktail.

250g butter

100g caster sugar

150g demerara sugar

4 eggs

1 tsp vanilla extract

250g self-raising flour, sifted

2 tbsp milk

2 limes, zested and juiced

Icing

300g cream cheese

100g icing sugar

Handful mint leaves, chopped

1 lime, zested

Preheat the oven to 180°C/350°F/Gas 4.

Grease and line a 20cm square cake tin.

Beat together the butter, caster sugar and demerara sugar.

Add the eggs, beating between each addition.

Add the flour, vanilla extract, milk, lime zest and lime juice and stir together well.

Bake for 30 minutes. Cool on a wire rack.

In the meantime, prepare the icing by beating together the cream cheese and icing sugar.

Add the chopped mint and half of the lime zest.

Spread the icing over the top of the cooled cake, scatter with the rest of the lime zest.

Slice and serve.
