Mojito chicken with lime salsa

1 handful of mint

1 clove of garlic

A splash of white rum

2 limes, juice only,

2 limes, quartered

4 chicken breasts

1 tbsp olive oil

For the salsa

1 ripe avocado

1 lime, juice only

½ red onion

1 tsp Tabasco

1 tbsp olive oil

Chop the mint and garlic finely and chuck into a zip-lock freezer bag. Add a splash of rum and all the lime juice. Sear the chicken fillets with a knife and add to the bag before sealing. Shake the contents of the bag before popping in the fridge to marinade, overnight if possible. 

Cut the avocado lengthways and discard the stone. Remove the flesh with a spoon and chop finely. Pop the avocado in a bowl and squeeze with lime, this will help prevent discolouration. Chop the red onion finely and combine with the avocado.  Add the rest of the lime juice, Tabasco and olive oil and combine well. 

Add a tablespoon of olive oil in a pan over a high heat and add the marinated chicken. Fry the chicken for 5 minutes on each side until cooked through. While cooking, add a squeeze of the lime quarters to the chicken and then tip into the pan. 

Serve with fresh salad or couscous.
