Pan fried chicken with mango salsa

This recipe is fabulously easy and is perfect for an easy family meal or a romantic dinner for two.
For the mango salsa:
1 mango (about 250g), peeled, stone removed and flesh cut into cubes
2 spring onions, trimmed and chopped
50g salted peanuts/ cashews, roughly chopped
1 tbsp chopped mint
1 tbsp chopped coriander
¼ red chilli, deseeded and finely chopped
1 tbsp lime juice
1 tbsp fish sauce
1 tbsp caster sugar
For the chicken:
4 skinless, boneless chicken breasts
Salt and freshly ground black pepper
Olive oil, for drizzling
Mixed peppers to serve.
Mix all of the ingredients for the mango salsa in a bowl and leave to one side.
Cut each chicken breast almost in half , then open out the two halves flat.
Season with salt and pepper to taste and drizzle with olive oil.
Add the chicken breasts to a frying pan on medium-high heat and cook for 3-4 minutes on each side.
Serve with the salsa and mixed peppers.
