Moroccan infused halibut with tomato salsa

Spice up your menu with this lovely halibut dish with salsa and Moroccan influences.
20g pack coriander (leaves and stalks)
3 garlic cloves
1 tbsp lemon juice
2 large tomatoes, well chopped
½ red onion, finely chopped
½ yellow pepper, well chopped
½ tsp each paprika, ground cumin and chilli powder
150ml olive oil
200g fresh halibut steaks, (4) each about 2½ cm thick
Put the coriander, garlic, spices and lemon juice into a blender and blitz smooth.
With the motor running, slowly add the olive oil until you get a smooth, thick sauce. Set aside.
Mix the vegetables with 1 tablespoon of olive oil along with coriander into a bowl and season with salt and pepper.
Sit the halibut steaks in a non-metallic dish and cover with two-thirds of the sauce.
Cover with cling film, then leave to marinate in the fridge for about 20 minutes minimally.
Heat a griddle pan or grill. Shake off any excess marinade, season the halibut steaks with salt and pepper then cook for 2-4 minutes
Depending on thickness for medium rare, turning once (cook 2 minutes more for well done).
Drizzle over the remaining sauce and serve with the salsa.
