Mother's Day lemon jam biscuits
These lemon jam biscuits are a delicious treat. They are just like the store bought ones but there is something about homemade biscuits that are divine.

110 g butter, softened

50g caster sugar

2 eggs

200g plain flour, plus extra for dusting

1 tsp vanilla extract

110g G’s Gourmet Lemon Jam

Icing sugar to garnish

Preheat the oven to 180°C / 350°F / Gas Mark 4. Line a baking tray with parchment paper.

Combine the butter and sugar together until creamy. Add in the flour and eggs gradually.

Spoon in the vanilla extract and bring all the ingredients together until it forms a soft dough.

Dust a flat surface with the flour and turn your dough out onto it.

Roll it into a flat disc about use your cookie cutters to cut about 24 discs

Place your finger in the centre of one disc to make a hole.

Line the discs on the baking tray and place in the oven for 15 minutes.

When cooked, remove from oven and allow to cool on a wire rack.

When cooled generously spread the jam on the disc with no hole. Top with the other disc and sprinkle a little icing sugar over it.
