One pot egg and tomato sauce supper

One pot egg and tomato sauce supper
A delicious combination is definitely one to try.
 

2 tbsp olive oil

1 medium onion, thinly sliced

2 garlic cloves, sliced

130g cubed pancetta

400g tomato sauce

4 large eggs

6 large fresh basil leaves, torn into small pieces

1 tbsp Parmesan cheese, grated

Crusty bread, to serve

Heat the oil in large skillet over medium heat.

Add the onion, garlic and pancetta.

Cook, stirring occasionally, until soft and beginning to brown.

Reduce the heat to medium-low then add the prepared tomato sauce and simmer.

Make 4 wells in the sauce with the back of a wooden spoon and crack the eggs.

Spoon over with the sauce and scatter the basil.

Cover and cook until the eggs are cooked.

Remove from the heat and sprinkle with Parmesan cheese and a generous grind of black pepper.

Serve with toasted crusty bread.
