One pot lentil chicken
This fuss-free one pot dish is packed full of flavour and contains only 360 calories per serving

1 tsp vegetable oil

2 rashers, chopped

2 large chicken thighs, skin removed

1 medium onion, thinly sliced

1 garlic, thinly sliced

2 tsp plain flour

2 tsp tomato purée

150ml dry white wine

200ml chicken stock

50g green lentils

½ tsp dried thyme

85g button mushrooms, halved

Heat the oil in a non-stick pan, add bacon and fry briskly until lightly golden in colour and then transfer to a plate.

Tip in the chicken and fry on each side until lightly brown. Leave to one side with the bacon and then add the onion and garlic.

Leave to cook for 4-5 minutes.

Mix in the flour, followed by the tomato purée and then continue stirring over a low heat for 2-3 minutes.

Add in the wine, stock, lentils and thyme. Bring to the boil and then reduce to a simmer for five minutes.

Stir in the mushrooms, add the chicken and bacon and combine well.

Cover and simmer for a further 25- 30 minutes until the lentils are tender and the chicken is fully cooked.

Season if desired.
