500g Irish Back Rashers
8 Irish Pork Sausages
6 Large Free Range Eggs
280g Irish Large Flat Mushrooms
2 tomatoes
4 slices black pudding
4 slices white pudding
Fresh thyme
Olive oil
Salt and pepper
Preheat the oven to 200°C.
Cook pork sausages for 10 minutes in a roasting tin.
Add halved tomatoes & flat mushrooms, fresh thyme, salt & pepper. Then drizzle with olive oil & return to the oven for 10 minutes.
Add slices of Irish black & white pudding, break in large eggs & add Irish back bacon rashers. Put back in the oven & cook for 6-8 minutes.
Serve with brown soda loaf & orange juice.
