Orange and blueberry loaf cake
This cake also works wonderfully with chocolate chips in place of blueberries. 
 

335g self raising flour

185g castor sugar

2 orange zest

225ml orange juice or elderflower cordial

3 eggs

4 ½ tbsp light olive oil

150g blueberries

1 tsp icing sugar

Preheat oven to 180C/ 350F/ gas mark 4. Line your loaf tin with parchment paper.

Sieve the flour and castor sugar into a medium bowl. Stir in the orange zest.

In a separate bowl beat orange juice or elderflower cordial, eggs and olive oil.

When this is well blended, add to the dry ingredients. Stir in the blueberries. Pour into tin.

Bake in the oven for 45 minutes. 

Remove and leave to cool on a wire rack. Finish by sprinkling icing sugar on top.
