Oriental slaw

Oriental slaw
Crisp fresh Asian flavours in this medley of shredded vegetables make a really nice alternative to the average slaw. 
 

1 large carrot, coarsely grated

½ small white cabbage, shredded

1 red onion, thinly sliced

Generous handful coriander, chopped

For the dressing

1 tbsp white wine vinegar

Zest 1 lime, plus 1 tbsp juice

3 tbsp sunflower oil

1 red chilli, deseeded and finely chopped

Generous pinch sugar

1 tsp cumin seeds, optional

Mix all the dressing ingredients with some salt and pepper in a bowl.

Pile the vegetables on top and serve.
