Surprise your guests with these beautiful cupcakes!
1 box vanilla cake mix + required ingredients
Green food colouring
1 box chocolate cake mix + required ingredients
12 gold chocolate coins
For the buttercream
225g softened butter
50g cocoa powder
450g icing sugar
1 tsp vanilla extract
3 tbsp milk
Prepare the vanilla cake. Add green food colouring to the mix, transfer into two greased 20cm cake tins and bake according to package. Let cool completely and put in the freezer for 30 minutes.
When the cake is quite hard but not frozen, cut as many mini shamrock shapes as possible in the cake, using a small cookie cutter.
Make the chocolate cake mixture according to package. Prepare the cupcake cases. Fill the case to about ½, then stick a shamrock in the middle, pushing down slightly, then cover shamrocks with chocolate cake mixture. Bake according to package.
Meanwhile, make the frosting. Whip butter until pale and fluffy. Add the cocoa powder and vanilla extract and then gradually, add the icing sugar. Finally, add the milk and beat.
When the cupcakes are cool, top with frosting and decorate with a chocolate coin. Place in a black bowl to create a pot of gold!
