Parmesan crusted pork chops
Crisped pork chops with new potatoes are simple to make and go down a storm.
 

70g rocket

3-4 tbsp olive oil

½ lemon

1½ tsp capers, drained and roughly chopped

100g breadcrumbs

25g Parmesan cheese

1 egg, beaten

Flour, for dusting

660g thin-cut pork chops

Steamed new potatoes and green beans, to serve

Put the rocket into a food processor along with 2 tablespoons of olive oil and a squeeze of lemon juice.

Blitz together until it forms a rough paste.

Stir in the capers then set aside.

Mix the breadcrumbs and Parmesan together on a large plate.

Pour the egg into a large, shallow bowl.

Pat the meat dry with kitchen paper, season well with salt and pepper then dust with flour.

Dip each chop into the beaten egg and then press into the breadcrumbs until they are coated completely.

Heat a little of the olive oil in a large pan.

Cook the chops in batches for 3-5 minutes on each side, until golden and crisp and the meat cooked through.

Serve with a dollop of the rocket dressing, plus new potatoes and your choice of vegetables.
