Peach cobbler
1 x 410g tin peach slices, reserve half the juice
225g self raising flour
Pinch of nutmeg
2 tbsp sugar
50g margarine
1 egg
150ml milk
For the topping:
2 tbsp sugar
For the filling:
Pre heat oven to 200°C/400°F/Gas 6. Lightly grease a small ovenproof dish with butter.
Add the flour, nutmeg and sugar to a bowl. Rub in the margarine until the mixture has a breadcrumb like consistency.
Gently beat the egg and milk together and mix into the dry ingredients.
Combine until you have a soft dough.
Tip the peaches and half of the juice into the prepared dish and spoon over the mixture.
Sprinkle with sugar and place in the oven to bake for about 40 minutes until risen and golden-brown.
Serve hot with cream or ice-cream.
