Peach, prosciutto and blue cheese salad

2 ripe peaches, stoned and quartered
4 slices prosciutto, torn
100g blue cheese, cut into chunks
2 handfuls rocket
2 tbsp pine nuts, toasted
2 tbsp olive oil
1 tbsp lemon juice
½ tbsp maple syrup
Arrange the peaches, prosciutto, blue cheese and rocket on 2 plates.
Whisk together the olive oil, lemon juice and maple syrup to make the dressing. Drizzle the dressing generously over the salad and sprinkle with the pine nuts.
