Pear and toffee muffins

Pear and toffee muffins
These delicious muffins are at their best when served warm out of the oven.

300g self-raising flour

2 tsp ground cinnamon

1 tsp baking powder

Pinch of salt

85g golden caster sugar

250ml milk

2 eggs, beaten

100g butter, melted

2 ripe pears, peeled and cut into small chunks

100g soft toffees, chopped into pieces

25g flaked almonds

Preheat oven to 200°C / 400°F / Gas Mark 6. Line a 12-hole muffin tin with paper cases.

Add the flour, cinnamon, baking powder and just a pinch of salt into a large bowl, then stir in the sugar.

Combine the milk, eggs and melted butter in a large bowl.

Then pour in the dry ingredients together with the pears and a third of the soft toffee pieces.

Mix briefly just until it's just coming together. The batter should still be quite lumpy.

Add the mixture into the cases and then sprinkle with the rest of the toffee and some flaked almonds.

Place in the oven to bake for 25-30 minutes until the muffins are risen, golden and feel firm to the touch.

Take out of the tin and transfer to a wire rack to cool.
