Pesto and parmesan muffins
This savoury muffin with parmesan cheese and pesto is not to be missed. It makes for an excellent alternative for the lunchbox.
 

50g butter, melted

6oz milk

200g self-raising flour

2 tbsp pesto sauce

85g parmesan cheese, grated

Pepper

2 eggs

Chives for garnish (optional)

Preheat the oven to 180°C / 350°F / Gas mark 4.

Grease a large muffin tray and set aside.

Melt the butter and mix with the milk.

Place the flour, pesto, parmesan cheese and pepper into a medium bowl.

Make a slight well in the centre, add the eggs and pour in the milk and butter mixture.

Very gently, using a rubber spatula fold the mixture rather than stir it.

Once well combined, portion the mixture into the prepared muffin trays and bake in the oven for 15-20 minutes or until golden brown.

Remove and cool on baking rack. Add the chive garnish if using.
