Pesto chicken kebabs with roasted vegetables

2 courgettes, chopped
1 onion, chopped roughly
2 red peppers, deseeded and cut into square chunks
4 thyme sprigs, leaves removed
4 tbsp, olive oil
4 boneless, skinless chicken breasts, cubed
Juice of lemon
4 tbsp pesto
16 cherry tomatoes
Preheat oven to 200°C/400°F/ gas 6.
Toss the vegetables into a large roasting tin. Drizzle with olive oil and thyme and place in the oven to roast for 30-40 minutes.
Soak wooden 8 wooden skewers in warm water to prevent splintering.
Place the chicken into a bowl and combine with the pesto and lemon juice.
Push the chicken and vegetables on the skewers and place on a roasting tray.
Drizzle with a little olive oil and roast for 20 mintutes, turning half-way.
Serve with roast potatoes or pasta.
