Pineapple and chicken skewers

Pineapple and chicken skewers
Fun and easy to make, these will become a favourite with your children.

425g tin pineapple chunks, drained, juice reserved

4 tbsp tomato ketchup

2 tbsp white wine vinegar

500g skinless chicken thighs, cut into chunks

6 Cherry tomatoes, to top as garnish

Mix the pineapple juice, tomato ketchup and vinegar with a little salt and pepper together.

Pour over the chicken.

Allow to marinate for 5-10 minutes.

Thread the chicken, and pineapple alternating each onto as many skewers as available to use up both the fruit and the chicken.

Heat the grill, to medium.

Brush any excess marinade over the skewers, then grill turning regularly, for about 8 minutes or until the chicken is starting to char at the edges and is cooked through.

At this point you can add a cherry tomato to each, if you like and cook for 30 seconds more.

This dish goes well with rice or noodles.
